Ingredients
1 lb Italian sausage
1 lb spinach
1 tbsp olive oil
4 cloves garlic, minced
1 onion, chopped
2 tomatoes, diced
1 jar Vodka Sauce
1 tsp-1 tbsp crushed red pepper (depending on how spicy you would like it)
1 lb Orecchiette Pasta
4 oz goat cheese
salt and pepper
Directions
1. Heat a large skillet over medium heat. Add Italian sausage. Cook until browned.
2. Remove Italian sausage from skillet, reserve in bowl. Reserve pan and oil from sausage.
3. Add olive oil into skillet from sausage. Add in garlic and onion. Cook until translucent.
4. Add vodka sauce, sausage, tomatoes and crushed red pepper into the skillet. Cover and simmer for 10 minutes, stirring occasionally.
5. Over high heat boil a large pot of water. Once boiling, add spinach. Cook for 2 minutes (if using frozen, cook until heated through and no frozen clumps remain). Drain and rinse with cold water. Set aside.
6. Using same pot, fill with water and lightly salt water. Once boiling, cook Orecchiette as directed on packaging. Remove from heat and drain once cooked.
7. Pour sausage/sauce mixture into the empty pot from pasta. Add the pasta and spinach in, cook until heated through.
8. Using half of goat cheese, crumble into small bits and put into pasta mixture. Stir.
9. Plate pasta into shallow bowls or onto plate. Top with remaining goat cheese and a sprinkle of pepper. Serve!
