Strawberry Banana Crumb Cake Recipe





This morning I woke up with the desire to bake. My first creation in our new kitchen! I whipped up this Strawberry Banana Crumb Cake. I baked it a few hours ago and the house still smells so delicious.


Ingredients

3 bananas, peeled and cut up
1 cup strawberries, chopped
2 cups sugar
1/2 cup unsalted butter, melted
1 cup milk
2 eggs
1 teaspoon vanilla extract
2 cups flour
1 teaspoon baking powder
1 teaspoon salt
1 tablespoon cinnamon
For topping:
1/2 cup unsalted butter, cubed
1 cup brown sugar
1 cup flour
2 tablespoons cinnamon + more for sprinkling on top

Instructions

1. Preheat oven to 350 degrees.
2. Line 9x13 pan with parchment paper.
3. In medium bowl, mix together bananas, strawberries and sugar. Using a masher (or a spoon but it will take longer), mash mixture together until liquefied.
4.  Add butter, milk, eggs, vanilla to banana mixture and whisk until combined.
5. In large bowl whisk together flour, baking powder, salt and cinnamon.
6. Add banana mixture into dry ingredients and stir until combined.
7. In separate bowl mix together topping ingredients until crumbly. You can use 2 forks to do this, but I prefer to use my hands.
8. Pour 1/2 of batter into 9x13 pan. Top with 1/2 of crumb mixture. Then layer on the last 1/2 of batter and top with remaining crumb mixture. Top with a sprinkling of cinnamon.
9. Bake for 40 minutes or until toothpick comes out clean. Top with some fresh strawberries once cooled and serve!
