Breakfast Sandwich with Candied Bacon, Spinach, Tomato and Provolone

Makes 2 sandwiches

 Ingredients

4 strips of bacon
4 teaspoons brown sugar
4 eggs
1/4 cup milk
salt and pepper
1 tablespoon butter for frying + 1 more for buttering bread
a handful of fresh spinach
1 tomato, sliced
2 slices of provolone
fresh Italian bread

Instructions

1. Preheat oven to 350 degrees.

2. Line a flat baking pan with foil. Fold the sides of the foil up a bit so that it will be an easier cleanup later. Layer an oven safe wire rack on top. 


3. Place 4 pieces of bacon on rack. Place one teaspoon of brown sugar onto each piece of bacon and rub in. You only have to do one side of the bacon. 


4. Place bacon in oven and cook for 15 minutes or until it reaches the desired amount of crispiness.

5. While bacon is baking, start making eggs. Lightly beat eggs, milk and a dash of salt and pepper together.

6. Heat an 8 inch non stick skillet over medium heat. Add butter until melted and sizzling. Add egg mixture. 


7. As eggs begin to cook, using a spatula lift one side of the eggs and swirl the pan around so that the uncooked egg on top swirls under. This will ensure that you will end up with a solid portion of egg rather than more loosly scrambled eggs. It's better in a sandwich when it's more solid.

8. After a few minutes and the egg begins to brown on the bottom, add the spinach to the top and then flip the eggs. 


9. Once finished, remove from heat and set aside.

10. Cut the Italian bread into 4 slices. Butter one side of each slice. 


11. Once bacon is finished, remove from oven. Place slices on paper towels to absorb oil. 


12. Asseble sandwich. Layer one slice of bread (butter down), egg/spinach, slices of tomato, slice of cheese, and then bacon. Top with other slice of bread (butter up).

13. Using the same skillet from the eggs, place your sandwich in the skillet and press down firmly with a spatula to flatten sandwich as much as you can. You can alternately place an iron skillet on top. This will help the sandwich heat through. 


14. Once bottom is browned, flip and once again press down firmly. 


15. Once finished remove from heat.

16. Cut in half and enjoy!
